Weekend Wonderfulness

Open and pour. Open and pour.


That is all I feel like doing this weekend.


This soup is great for a quick meal, but it is also good for company because you can double it or x4 it or whatever.


It is a recipe where the whole is greater than the sum of its parts. Or maybe I said that wrong. I mean that it tastes better than it sounds.



Mexican Minestrone



1 pound ground beef

2 cans minestrone soup

2 cans rotel

2 cans pinto beans



Brown the ground beef. Drain. Pour in the other stuff. Cook awhile. Eat.



Sometimes I ditch the meat and add more beans. I've added corn before. On occasion I eat it over Fritos and top it with cheese. Cornbread is a good addition, too.


I know that you are going to think that this is a blow-off recipe and it is not a big deal. But it is really good and if you don't try it you'll be sorry.
